Try these five favorite family meals from our family to yours!

What’s for dinner? I hope these quick and easy, healthy family meals will help you and your family eat well during the COVID-19 pandemic. These are my favorite family meals of 2020 so far. What are some of your favorites?

Minestrone Milanese Soup

This soup is hearty and delicious, and can be made with whatever vegetables you have on hand! Add some cooked chicken and chicken broth to make a heartier soup. Make extra so you can heat it up for lunches or quick dinners all week long!

Roasted Veggie & Black Bean Tacos

These tacos are equally good for breakfast, lunch, or dinner!

Mediterranean Pasta with Broccolini & Sun-dried Tomatoes

Try this dish with your favorite pasta – regular or gluten free!

Chickpea Hummus with Lemon & Parsley

Hummus is great for sandwiches (try avocado, hummus, and sprouts or lettuce!) or as a dip for veggies and pita. Homemade truly beats store bought!

Veggie Lover’s Pizza!

You’ve made it through the week eating so healthy. Now it’s time to make a kid-friendly meal that everyone will enjoy. The dough in this recipe is made with regular wheat flour and can be hand-tossed if you dare to try! But use a pre-made crust if you have one, or a gluten-free variety if you prefer.

Enjoy these healthy family meals, whether you are cooking for yourself or cooking for a crowd. Healing is an ongoing process, just one meal at a time!
